Hey, none of the videos on this website work on my Macbook. I use Safari and Firefox. Otherwise, I've watched your videos on my PC and I love them! Great information, thanks a lot Jamie!

Just made a batch and they came out great! Very moist and will be perfect meal right after I get off work. I added some Red Bell Pepper.
Next batch I am going to replace the McCormick’s Chipotle Pepper Spice and Cumin with McCormick's Caribbean Jerk Seasoning Sweet & Spicy(dry spice) and some cinnamon and maybe some honey and see what happens.
Thanks for the recipe it is so easily tweaked you can always come up with new versions!

I made these awesome muffins! I made one batch with oats and one batch with brown rice. Both turned out delicious! Thanks for this great recipe! How do you store these? Sounds like you just put them in a baggie in the fridge? How long do they keep? Since I made 2 batches, I will probably freeze some of them. Thank you for being such an inspiring individual. I'm training for my first competition (in October) and your story and tips/advice are so helpful!

Wow I just finished my first batch and these are AMAZING. Totally perfect for something to just grab, and its healthy, AND has protein. I added some tomato sauce (and extra oats so not soggy) because I love anything tomato and it turned out fantastic. Thank you SO much for sharing all your tips, they really make a difference. =]

Chicken Meatloaf Muffins
1/2 tsp. ground cumin
1/2 tsp. dried thyme, crushed
2 tsp. dry yellow mustard
2 tsp. black pepper
2 tsp. McCormick’s Chipotle Pepper Spice (spicy, but key to the recipe)
1 tsp. salt
1 cup quick cooking oats
2 cloves garlic, minced (or 2 tbsp of garlic powder)
1 small onion, finely chopped (I get the pre chopped version or even the frozen - thawed)
2 stalks celery, finely chopped
3 egg whites
1 1/2 - 2 lbs. ground chicken breast (I use 3 packages)
Preheat oven to 375 degrees.
In a large bowl, add cumin, thyme, yellow mustard, black pepper, McCormick’s Chipotle Pepper Spice, salt, oats, garlic, onions and celery.
Mix until well combined. Next add the ground chicken and egg whites and
mix with your hands until evenly distributed. Make racquetball size portions and place in muffin tins, sprayed with non-stick spray. Bake for 40 minutes.
Yields about18 muffins
Nutrition: 1 muffin

2 g fat
4 g carbs
11 g protein
Servings are usually 2 for women and 4 for men.
